The Process: After conducting an assessment of all the Food and beverage outlets of the site, hearing the staff issues, examining the menus, processes and considering the goals of the organisation, Tom Rutherford in conjunction with Stephen Kelly of HMA provided a detailed plan for the changes that needed to be made. For three months, Tom worked as the quasi Food and Beverage Manager implementing alongside the staff his recommendations & ideas, eventually replacing himself. At every point along the way the staff were learning and adapting; Tom was sure to add capability and understanding and not reliance on him. The staff were presented with an organisational chart clearly showing their roles & how they interrelate. Work flow processes, kitchen, café and restaurant floor plans, check lists, forecasting rosters, set up procedures, recipes, stock take processes and P&L planning where all documented and implemented All staff now have a focus on turnover, queuing processes and a sense of urgency, resulting in greater customer satisfaction, experience and increased per head spend & lower cost …..you have demonstrated considerable experience & expertise in food, beverage & staff performance by implementing a with ranging series of changes. These changes have had an immediate effect on the quality of food and beverage and the service to our customers. Naturally these changes lead to an increase of in revenue & profit in all outlets……in achieving your objectives you have displayed a high level of professionalism, dedication to the tasks at hand and an ever present sense of humour.
